Traditional Method Sparkling Shiraz // 3 Bottle Gift Box

It takes almost three years to create a bottle of 'Comet Tail' sparkling shiraz. Beginning with the fermentation of sun-ripened Shiraz bunches into a wine of sublime intensity that is first barrel aged then bottle aged. The generous amount of time on lees helps create intensity of flavour, a soft mousse and the savoury notes that lead the way in this wine. The 2018 Comet Tail is then finished with a dosage liqueur; an inspired blend of aged fortified Muscats and Topaque that add complexity and complete this beautiful wine.
