Traditional Method Sparkling Shiraz // 3 Bottle Gift Box

This Sparkling Shiraz is a labour of love, from grape to glass. The complex and structured base wine is enhanced by traditional bottle fermentation and bottle ageing before disgorging after approximately 18 months on yeast lees. For the finale, it is finished with dosage liqueur, adding another layer of intrigue and complexity to this wine.

With a hint of fruit-sweetness to carry the bubbles, but finishing dry, this wine is the perfect party starter.

This release displays notes of gala apple, blueberry and freshly ground pepper.  On the palate there is chinotto, nutmeg and more fresh berries. A standout feature is the fine, soft mousse which dances playfully across the tongue.

The 2021 Comet Tail will pair beautifully with glistening, salty jamon draped over crusty oiled bread.
